Quick Easy Dinner Recipes - Mexican Style!

We all want quick and easy recipes for dinner but also want something that is flavorful, easy on the budget and something the whole family will enjoy. Here are some easy quick easy dinner recipes with some Mexican flair!

Enchilada Casserole

This is a fun, kid friendly enchilada type recipe. Kids and adults alike love the crunch of the tortilla chips. If you want to make this recipe extra quick, use the dehydrated onion flakes rather than chopping fresh onions.

Ingredients:

1 pound ground beef
1 package enchilada seasoning mix
1 can tomato soup
1 ½ c shredded cheese
½ c chopped onion (or 1 tablespoon dehydrated onion flakes)
1 can cream of chicken soup
Tortilla chips


Directions:

Preheat oven to 350 degrees.

Brown meat and onion, draining any fat. Add soups, enchilada seasoning mix and ½ cup water.
Spray a 9 x 13 baking dish with cooking spray. Spread half of the meat mixture in the bottom of the pan, then put some coarsely-crushed chips, then half of the cheese. Repeat layer ending with cheese.

Bake for 30 minutes.

To round out this meal, just serve with a fresh, crisp green salad with your favorite dressing. If you feel like you need a little more, open a can of refried beans, put in a microwave safe dish and warm in the microwave. Serve on the side.

Taco Noodle Bake

Here is another one of my quick easy dinner recipes that combines the favorite flavors of tacos and macaroni & cheese. This recipe is definitely family friendly and especially budget friendly.

Ingredients:

1 package macaroni & cheese dinner
1 pound ground beef
1 package taco seasoning mix
¾ cup water
¾ cup sour cream
1 ½ cups shredded cheddar cheese, divided
1 cup salsa

Directions:

Preheat oven to 400 degrees.

Prepare macaroni & cheese as directed on the package.

While the macaroni is cooking, brown meat. Drain any fat. Add the taco seasoning and water, simmer 5 minutes.

Once the macaroni & cheese is prepared, add sour cream.

Put half of the macaroni and cheese into an 8 inch square baking dish. Spread with the meat mixture and 1 cup of the cheese. Top with the remaining macaroni & cheese.

Cover and bake for 15 minutes.

Put salsa and remaining cheese on top. Bake, uncovered for 5 minutes.

To round out this dinner, serve with a fresh, crisp salad and your favorite dressing or with green beans. If you feel you need a little extra, warmed rolls would also be a nice addition.

Both of these quick easy dinner recipes would be excellent served with a special but easy dessert. Vanilla ice cream drizzled with warmed chocolate sauce and a cookie would be the perfect finish to a perfect dinner!
